蕃茄蛋包飯Tomato Fried Egg Rice 檸檬酸甜豆Lemon Pepper Sugar Snap Peas

Oh, my boys are hungry. I got to make something fast that they will eat. All I have is some leftover rice, egg, and veggie. This is what I came out.  They love it. This is my easy way to make omelette wrapped rice. 
兒子們肚子餓了!要趕快做些他會吃的。冰箱只有蛋,菜,和剩飯。這道菜他們也愛吃呀!這是我簡易蛋包飯。
材料ingredients
4 Eggs 蛋
1T Water
4C Cooked rice 剩飯
4 Diced tomato 蕃茄丁
2T Chopped green onion 蔥花
2T Oil 油
2T Catchup 蕃茄醬

Directions 方法
1. Beat the eggs with some water. Pour half of the egg in the heated skilled swirl around as a omelette. 蛋加水打散。放熱鍋中煎成蛋皮。
2. Place the omelette in a big round ball. 將蛋皮放入湯碗。
3. Cook diced tomato in hot skillet until the juice come out. 將蕃茄放熱鍋中煮出汁。Add the other half if the egg into the hot tomato. Wait until the egg cooked, then stir. 將蛋汁到入熱蕃茄中,蛋成形後再攪拌。
4. Add cooked rice, green onion, catchup salt and pepper to taste and stir. 最後加上飯,蕃茄醬,蔥花,和䀋,黑胡椒拌勻。
5. Put the rice mixture into the bowel that lined with omelette. Flip over with a plate and garnish with some catchup. 把炒飯放在有蛋皮的碗中,倒扣在盤中。擠蕃茄醬裝飾就好了!


酒釀小籠包 Fermented Rice Baby Steam Buns

People are crazy about these mini steam bun (tongbou). It is not very to make so I come up with some easy ways to enjoy at home. 大家對湯包瘋狂。因為不太好包,所以我用簡易法可以在家做。
Ingridents 材料
Dough 1 老麵團
1/2 C All purpose flour 中筋麵粉1/2 杯
1t Yeast 酵母 1 小匙
1/6 C Water 水1/6杯
Dough 2 麵皮
3 C All purpose flour 中筋麵粉 3 杯
1C Warm water 溫水1杯
Filling 內餡
1.5 lb Ground pork 3:1 瘦肥比例豬絞肉
2T grounded ginger 薑末
4T Fermanted rice 酒釀
4T condensed Chicken stock 濃雞湯
2T Chopped cilentro 香菜末
2T Chopped green onion 蔥末
2t salt 䀋
1t sugar 糖
1T Sesmean oil 麻油
Ginger Vinergratte 薑醋汁
2T Grounded ginger 薑末
4T Rice viniger 醋
6T Water 水
1T Sugar 糖
Directions 方式
1. Put Dough 1 Ingridents in bread machine and use full dough cycle. After dough 1 is done, add Dough 2 Ingridents into it and mix with half dough cycle. 先將老麵在麵包機做好,然後放入麵皮的部分攪勻就好。
2. Mix filling Ingridents together and stir it until sticky. Divid the filling into 24 mini muffin tin and put in the freezer. 把肉餡充分攪拌。分放在24 個模型地,凍着。

3. After the dough rest for 20 min, roll it flat and use cup make 24 wrappers. 麵糰醒20分鐘後用桿麵棍桿成麵皮。再用杯子口切出24 圓形麵皮。

4. Put the filling on the wrappers and use left thumb hold the filling, right hand hold the wrapper. One by one with the motion if lift, turn, and fold. In the end, take the thumb out and seal the wrapper. 肉餡放在麵皮,左手大拇指往後壓,右手拿麵皮,一面往上提、一面轉並打摺,最後左手大拇指抽出,麵皮封口成形。

5. Use 4 C boiling water steam for about 10 minutes. 待水滾,蒸籠放上蒸十分鐘左右。

6. Serve with gunger vinaigrette. 沾薑醋汁



Easy Beef/Pork Jerky 簡易牛/豬肉乾


Save $10 plus per pound, you can make it at home the way you wanted. 不用再花大錢去買,自己在家就可以做。

Ingrident 材料:
1.5 lb Thin sliced poor or beef ( You can ask for hot pot meat at the Asian markets) 肉薄片-火鍋肉片最好
1/4 C Soy Sauce 醬油 1/4 杯
1T Rice Wine 米酒1大匙
2 T Honey 蜂蜜 2大
1T Brown Sugar 糖 1大匙
2T grounded ginger 薑末 2大匙
3T chopped garlic 蒜末 3 大匙
Directions 步驟:
1. Add all seasoning and mix well. The taste should be sweeter and saltier than normal. 所有調味料放入杯子中混合均勻嚐一下味道,應該稍微甜鹹一點
2.Mix in with meat and marinad in the fridge overnight. 將調味料倒入肉片中混合均勻放入冰箱醃隔夜

3. Spread the meat and lay on a parchment paper. Make sure two slices are overlap. 
薄肉片仔細鋪在烤紙上,肉片與肉片中間必須有些許重疊
4. Put another parchment paper on top and genteelly roll it flat with rolling pin. 放上另一張烤紙,用滾麵棒滾平

5. Place in a 250F over for 1.5 hr until meat is dry. 放入250 F 的烤箱中低溫烘烤90分鐘至肉
   片完全乾燥即可

6. Transfer the jerky to grill or smoker to finish. Cut and serve. 烤好放烤肉爐或薰爐,薰好用剪刀剪成適合大小食用

Green onion bread 蔥花包

I love to get this bread in the Taiwanese bakery. Usually, it is the cheapest but tastiest item on the shelf. The salty and a little bit spicy green onion topping works well the traditional sweet bread.  Got to eat it when it's fresh from the oven. 我喜愛臺灣麵包店的蔥花包- 一般是最便宜又最好吃的。鹹味帶點辛辣的蔥面跟帶甜的麵包配合的剛剛好。要趁熱吃呀!
Ingredients 材料:
Dough 麵包
420 g All purpose flour 中筋麵粉340公克
60g Sugar 細砂糖60公克
1 Egg 蛋
4T Butter 奶油50公克
1T Salt 鹽1小匙
1T Yeast 乾酵母15公克
225 g Milk 牛奶225公克  
 
Topping 餡料:
150g Chopped green onion 青蔥159公克
4T Butter 奶油50公克
2T Flour 麵包粉18公克
1Egg 蛋1個
1t Black pepper 黑胡椒適量 、
1T Salt 鹽適量
1t Sugar 糖適量  
 
Direction 做法 
1.Put all dough ingrident except butter into bread machine. Use dough cycle to mix to dough. at the first rest, add in butter. 除了奶油,將所有麵糰用麵包機攪拌成糰。 等成糰後後再加入奶油。  
2. After raising, divid the dough into 12 and make round shap. Then, let the dough raise for 20 min. 將發酵號的麵糰分割成12分揉成圓形,進行30分鐘的最後發酵。  
3. Mix the topping ingredients with melted butter. 再將奶油熔化,所有餡料拌勻備用。 

4. Cut the center of the dough and add the topping on. 每個小麵糰表面劃開一刀,並置入適量餡料。  
5. Bake in 375 F oven for 10-12 minutes. 烤箱以火180℃ 烤10~12分鐘即可。

Chinese Fermented Rice 甜酒釀

With my special memory from my hometown, my favorite order is fermented rice egg drop soup with black Sesmean rice balls. 回憶故鄉的美味-酒釀蛋花湯加芝麻湯圓
Ingredients 食材

4 C Sweet rice 糯米
2 3/4 C Water 水
1 Rice wine starter 酒餅
1 Clean sealed glass container 玻璃瓶
1C Rice wine
Directions 步驟

1. Soak sweet rice with water overnight then steam it. 將糯米泡水隔夜然後蒸熟。
2. Spread cooked sweet rice on a clean backing sheet to cool. 將糯米攤平弄涼。
3. Ground rice wine starter to power then use 1T spread I the bottom of the glass jar, set another 1T aside, and the rest evenly spread onto cooled sweet rice. 把酒餅磨成粉用一湯匙灑在玻璃瓶底,一湯匙放一旁,剩下的均勻的灑在涼的糯米上。
4. Put stirred rice mixture into cleaned glass jar. Make a hole in the center and spread the 1 T wine starter on top. Then put it under the sink, closet, or somewhere dark and warm for 3-6 days. 把攪拌好的糯米放入玻璃瓶中,中間弄一個洞,再灑上1湯匙的酒餅粉。再放入溫暖黑暗的地方3-6天。
5. When the center whole has water, it is ready to eat. If after three days there is still no water, you can add 1 C rice wine on top to speed up the process. 當中間的洞出水後就可吃了。



Vegan! Veggie Stuffed Cake 素菜餅

Healthy vegan veggie stuffed cake. Make you look veggie differently. 

Ingredient 材料
熟麵皮Wrapper
1 C whole wheat flour 一杯全麥麵粉
2 C white flour 2 杯中筋麵粉
1C Hot water 1 杯熱水
1/2 C Cold water 半杯冷水
1t Salt 䀋
內餡Stuffing
1lb shredded Chinese radish 蘿蔔絲
1 lb Chopped baby bok choy青江菜
4-5 Chopped Shiitake mushrooms 香菇末
2 T Sesmean Oil芝麻油
1T grounded ginger 薑末
1t White pepper 白胡椒粉
2t Salt 䀋
1. Gradually mix in hot water into the flour mix and then add cold water until dough consistency.  慢慢加熱水到麵粉中,再加冷水揉成糰。 Then, let the dough rest for about 20 min. 等20 分。You can do this step in bread machine dough cycle. 可以放麵包機做
2. Sauté mushroom and ginger in hot Sesmean oil until mushroom turn brown. 將香菇和薑末放入熱的芝麻油爆香。Then, stir fry in radish, bok choy, salt and white pepper to taste. 再加入蘿蔔,青江菜,䀋,胡椒炒熟。Set the cook vegetables mix aside to cool and squeeze out water. 把菜放涼
擠出多餘的汁。
3. Roll the dough to flat 1 inch thick and use the cup to cut circles. 把麵糰滾平,用杯口切出圓形。
4. Stuff the vegitable mixture and gather the dough to seal at the center as a round dumpling. 把青菜放入包起來。
5. Flatten a little then pan fried both sides in medium heat till golden brown. 輕輕押一下然後用中火煎熟。

迷你牛肉餡餅 Beef Stuffed Pancakes

最愛的北方小吃!餡多又出汁。現在在家裡簡單的做了!
My favorite Northen Chinese Appetizer! It's tasty and juicy. This is my easy way to make at home!
Ingredient 材料
熟麵皮Wrapper
1 C whole wheat flour 一杯全麥麵粉
2 C white flour 2 杯中筋麵粉
1C Hot water 1 杯熱水
1/2 C Cold water 半杯冷水
1t Salt 䀋
內餡Stuffing
11/2 lb ground beef 牛絞肉
4 T Soy Sauce 醬油
2 T Sesmean Oil芝麻油
2T grounded ginger 薑末
1 C Chopped green onion蔥末
1 t Rice Vineger 醋
1t White pepper 白胡椒粉
1. Gradually mix in hot water into the flour mix and then add cold water until dough consistency.  慢慢加熱水到麵粉中,再加冷水揉成糰。 Then, let the dough rest for about 20 min. 等20 分。You can do this step in bread machine dough cycle. 可以放麵包機做
2. Mix beef with all the seasoning and stir until it is sticky. 把牛肉和醬料一起攪拌到肉黏黏的。Then mix in ginger and green onion. 再加入蔥薑。
3. Roll the dough to flat 1 inch thick and use the cup to cut circles. 把麵糰滾平,用杯口切出圓形。
4. Stuff the beef mixture and gather the dough toward center as a round dumpling. 把牛肉放入包起來。
5. Flatten a little then pan fried both sides in medium heat till golden brown. 輕輕押一下然後用中火煎熟。
6. To make sure the filling is well done you can transfer the cake to 400 F oven for 5-10 min. 為了確保肉熟,可將煎餅放入400 度烤5-19分鐘。
